“Washoku: Traditonal Dietary Cultures of the Japanese” was added to the UNESCO Representative List of the Intangible Cultural Heritage of Humanity in 2013. The best places to experience washoku culture are Ryotei and Kappo. Most Ryotei serve customers in private rooms and Kappo restaurants mainly have counter seating. The number of reservations they can accept per day is limited and reservations are required.
You can also experience the culture of “Omotenashi (the Japanese way of hospitality which means to entertain guests wholeheartedly) when you are served at Ryotei and Kappo.
In Kyoto some of the traditional Rotei and Kappo refuse 1st time new customers or foreigner tourists.
